Homemade Marshmallows? Why not?

So this week the paper had an article and recipe for homemade marshmallows. Apparently, such marshmallows can get really fancy--think mint marshmallows with mini chocolate chips in them, or strawberry, or maple with bacon bits (really!). Well, the paper only had one recipe, a simple vanilla marshmallow recipe. We realized we had everything to do these, so Mom, Christina, and I worked together to make them, and here's the result. They were actually quite good! I think I see more experimentation with homemade marshmallow recipes in our future...

  1. Cool! Jessica made us some healthy ones when we went camping (from http://www.thenourishinggourmet.com/2011/08/fluffy-honey-sweetened-homemade-marshmallows.html) they didn't roast very well though - just melted. I've never heard of so many flavors!

  2. This is spooky---I cut this recipe out also but hadn't been able to fit it into my week. I hope to try it soon but wondered if the shape of my Bosch mixer bowl would work. Did you use your Bosch?

  3. Janelle--Based on how quickly they melted in our hot chocolate, I suspect that this recipe would have the same problems with roasting. There's probably something in store-bought marshmallows that helps them hold together better at hot temperatures!
    Mrs. J--That is a little spooky. :) We did use the Bosch with the whisk in it, and it seemed to do fine. BTW, I tried one of the biscuit recipes yesterday--the one with the cream cheese in it. It was pretty good, but I think the ones you served us were better!
